So sorry your dog is having these issues. We had a dog that suffered from the same thing. It is difficult to keep under control.
Do remove all dog food with chicken and/or rice. You have to be careful with other foods labeled with other meats as they may still
have some form of chicken in them (chicken meal, etc.). One of the things we used on our dog in order to keep any moisture
dried up in the ear was a half and half solution of white vinegar and alcohol. We would gently clean the ear and then apply a
few drops in each ear. We also gave our dog Benedryl for the itching. Please ask your vet about the above options.
You need to clean your dog's system. Some dogs may be allergic to rice, as well. As this article on rice for dogs states:

Beware: Some Canine Might Be Allergic
"Generally, rice serves instead carbohydrates for canines with grain allergic reactions, corresponding to corn, which is in lots of canine meals.
Whereas most canines arenāt allergic to rice, some have been identified to have an allergic response to it.
Signs often embody itchy pores and skin, hair loss, scorching spots, and ongoing ear infections."
Feeding your dog for a week free of chicken and rice may help. Also, giving him a tablespoon or two daily of probiotic yogurt will help.
